Makes around: 20 kavaabu / Prep time: 20 minutes / Frying time: 15 minutes
Ingredients:
1/2 cup rice flour
11/2 cup water
250 grams smoked fish (Valhomas)
1 big onion, cut into thin slices
1 fresh chilly, chopped
6 curry leaves, chopped
1/2 cup grated coconut
1/2 tsp. grated ginger
Juice of 1 lime
1 tsp turmeric powder
1 tsp. Salt
Instructions:
1_Add onion, chilly, curry leaves, ginger, turmeric and lime juice into a bowl and crush and mix to release juices, when mixed add, coconut, smoked fish mix again. Set aside.
2_Heat water in a pan just when the water comes to a simmer add rice flour into it. Stir constantly until all water is absorbed by rice flour and the dough comes together. Cover dough and let it sit for 5 minutes.
3_After 5 minutes add the rice dough and into the onion and smoked tuna mixture, mix to incorporate everything, taste and season with extra salt and lime juice. Make dumplings (kavaabu).
4_ Heat oil until very hot, fry kavaabu to golden brown.
Note: If the oil is not hot, kavaabu dumplings will separate into bits inside the oil. Frying kavaabu in hot oil until brown, it will take few minutes. You don’t have to worry thinking that the kavaabu may not be cooked inside, because the rice dough was cooked before it was added to the onion mixture and all other ingredients which were added was edible.
