To make filling

3-In to a pan add oil, onion, curry leaves, ginger garlic paste and scotch bonnet. Cook it a few minutes until the onions start to turn translucent. Then combine the green leaks, tomatoes, salt, chilli flakes, turmeric powder, black pepper and chilli powder. Give it a good mix

4-Add tuna and the potatoes, let it cook for about 3-5 minutes, stir often to avoid burning. Take off the stove and set it aside to cool.

Making fish roti

5- Take each small circle of dough and flatten it on a rolling board or on a pastry mat. Using a rolling pin, roll the dough thin, flat to form a circle, don’t have to be a perfect shape as long as it’s rolled flat it will work. Drizzle some oil on top of the rolled dough and brush using a pastry brush.

6-Place about 2 tablespoon of filling in the middle and fold 2 sides of dough overlapping each. Now starting from the filling side roll the roti.

7-Over medium heat, place a flat skillet. Place uncooked fish roti -the folded side facing down to cook until it turns to a shade of a light brown in color. When done turn it to cook the other side as well. Once both sides are evenly cooked turn the roti on all around the edges to cook too. Continue the same with the rest of the roti.
