Vegetable salad

1 head water lettuce, chopped or toned

1 cup diced tomatoes (let drain a minute or two if extra juicy)

1 cup diced cucumber (same size as tomatoes)

2 Avocado, diced

Salad dressing

3 tbs. honey

4 tbs. apple cider vinegar

1/2 cup extra virgin olive oil

1 tbs. mustard cream

Pinch of dried oregano

1 small onion, minced

Juice from 1/2 lemon

Salt and pepper


  1. Whisk together honey, apple cider vinegar, onion, lemon juice, mustard cream, and oregano. Slowly pour in olive oil while whisking to emulsify, season with salt and pepper to taste. Drizzle salad dressing on top of vegetables and gently toss to coat. Enjoy!

Creamy Fruit Salad

250 grams Strawberry, each diced half

2 Oranges, pitted and diced

2 Kiwi, peeled and diced

1 honey mango, peeled and diced

200 grams Grapes, each diced in half

1 big Apple, peeled and diced


125 grams plain yogurt

1/2 cup nestle cream

3 tbs. honey


  1. Mix all the fruits in a big salad bowl, pour dressing ingredients in another bowl mix well and drizzle over the diced fruits and toss gently to coat. Enjoy!
