Ingredients

3 tbsp. sunflower oil

6 sausages, sliced

1 big onion, chopped

4 cloves garlic, minced

1/2 fresh chilly

11/4 cup. Basmati rice,

21/2 cup water

3 tsp coriander powder

1/2 tsp. turmeric powder

1/2 tsp. ground black pepper

2 tsp. smoked paprika

2 tsp. chicken stock powder or 2 small Meggie chicken cubes

3 tbsp. tomato paste

1 tsp. salt

3/4 cup frozen vegetables, totally defrosted

4 tbsp. chopped parsley

Directions

1_Place a large cooking pan over medium-high heat. Once the pan is hot, add the oil. After the oil shimmers, add the sliced sausage and cook until browned on both sides, about 5 minutes. Remove from the pan and set aside.

2_Add the onion and garlic, saute for 4-5 minutes. Add the garlic, chilly and saute until soft. Add rice and roast in the onion mixture for 5 minutes. Pour water, let the water to simmer then add coriander powder, turmeric powder, pepper powder, chicken stock, paprika and tomato paste.

3_Cook until no water is seen on top of rice. Lower the heat, add vegetables and fried sausages, stir to combine, cover and cook until the rice is cooked. Stir in fresh parsley. Serve hot.
