Serves: 5 / Prep time:10 minutes / Cooking time:15 -20 minutes
1 cup full pressed grated carrots
3 1/2 cup water
1 can sweetened condensed milk
1/3cup+2tbsp. rice flour or powder
1/3 tsp. cinnamon powder + extra for dusting
1_In to a food processor add grated carrots and half cup of water, process to a rough paste not smooth.
2_Heat a nonstick pan on medium heat, add the rice flour and roast stirring constantly for 2 to 3 minutes. Do not let the color of rice flour change. When rice is roasted empty rice flour into a bowl and set aside.
3_In the same pan used to roast rice add rest of water and carrot paste, cook until carrots are cooked, around 5 to 6 minutes. Lower the heat and add cinnamon powder and rice flour, start cooking stirring constantly. Cook until very thick, like spluttering bubbles appear. Add condensed milk and mix well.
4_ Pour pirini into a serving plate or bowls and refrigerate for 2 hours. Serve sprinkling of cinnamon powder on top of each pirini bowl.
Note: If you like you can add nuts and raisins after adding condensed milk.
