Serves: 2 / Preptime: 20 minutes
Ingredients:
2 packets mamee Noodles
3 cups boiling water
200 grams smoked fish ( Valhomas)
1/4 cup sunflower oil
2 Onion , thinly sliced
2 spring curry leaves
5 piece pandan leaf
3 cloves Garlic, minced
Fresh chilly ( according to your taste)
1 medium Carrot, chopped small
8 to 9Green beans, chopped small
1 tbs. Roasted (hanaakuri) curry powder
1 tsp. red chilly powder (lonumirus havaadu)
11/2 pkt noodle seasoning
1 tbs. tomato paste
Instructions:
1_Empty noodles into a bowl, pour boiling water on top of noodles then cover with a lid or plastic food cover. set aside.
2_Heast oil in a pan, add smoked fish and fry for 3 minutes. Take onto a plate lined with kitchen towel or tissue.
3_ In to the same pan add onion Stir-fry the onion, curry leaves, pandan leafs, fresh chilly and garlic stir fry until onions are soft. Into this add carrot and beans fry for 4 minutes or until softened, then add the lonumirus curry powder, roasted curry powder, tomato paste and noodles seasoning. Stir well to combine everything. Add fried smoked fish mix.
4_Add the soften noodles and and toss everything together, stir-fry for another minute and serve hot.
