Ingredients:

For Cake Strawberry

Vanilla or white or butter cake

Strawberry Jam or Butter cream

If using butter cream Strawberry essence

Red food coloring

Green butter cream

Sparkling sugar (optional)

To make sparkling sugar you will need

Some sugar

Enough food coloring

For Cake Oranges

Vanilla or white or butter cake

Marmalade or Butter cream

If using butter cream orange essence or few drops of orange concentrate

Orange food coloring

Cloves

For Cake Mint Mango

Vanilla or white or butter cake

Mango jam or Butter cream

If using butter cream mango essence

Mint flavoring (optional)

Green food coloring

Cloves

Red and yellow petal dust or powder food coloring

Green butter cream

Instructions:

  1. Bake a cake just like you normally would. It can be from scratch – from a box – leftover birthday cake – it doesn’t really matter!
  2. Once your cake is cool, crumble it very fine! I like to cut the cake into sections and take one piece out at a time and crumble it into a bowl. Try and remove any chunks or crusty pieces!
  3. Once you feel good about your crumble job, it’s time to add the frosting or jam and flavoring mix it all together. Add color and mix until your desired color is achieved.
  4. You shouldn’t need more frosting, but if it still seems dry, add some more. Be careful though, because if you add too much frosting the cake fruits will get too soft to shape it. Place the cake dough in a zip lock bag or cover it with plastic wrap and refrigerate for about ½ hour.
  5. Form into 1 1/2 inch balls (or whatever size you like your balls), and shape them as the fruit which you are making. Place them on a plate.

Assembling or Finishing

Strawberries:

  1. Make sparkling sugar by adding some sugar and food paste color into a zip lock bag and rubbing the sugar and color between fingers. Roll the shaped strawberries in the sparkling sugar and pipe a star with green butter cream using a star tip on top of each cake strawberry and arrange on a serving platter or mini cupcake liners.

Orange:

  1. Push a clove all the way in until only the flower tip is visible on to each shaped cake oranges. For cake oranges also you can make sparkling sugar and arrange on a serving platter or mini cupcake liners.

Mint Mango

  1. Push a clove flower side in and keep the stem visible into each cake mango. Brush the mint mangoes with powder food color or flower dust to make it look realistic. Pipe tiny leaf with green butter cream near the clove stem and arrange on a serving platter or mini cupcake liners.
