For the batter:

1½ cups flour

1/3 cup corn flour

1 cup kanamadu( sea almond ) , grounded

3/4 teaspoon salt

1 teaspoon baking powder

4 eggs

½ tsp vanilla essence

1 1/2 cups sugar

1/2 cup milk

70 grams unsalted butter

1/3 cup sunflower oil

For frosting

1 can sweetened condensed milk

3/4 cup brown sugar

3 egg yolks

1/2 teaspoon sea salt

1 teaspoon vanilla essence

Extra gronded kanamadu(sea almond)

 

Note: There are two ways this cake can be made, method one is the way I have shown in the video this way cake will be bit heavy but moist and very delicious because of the amount of nuts in it. Method two will make cake light and soft. You can choose either way.

Method: 1

1_ Pre heat oven to 320F/160C, line a 9” inch baking tray with baking paper. Melt butter in oil, set aside to cool completely.

2_ In to a blender add sugar, milk, vanilla essence, eggs, melted oil & butter mixture and blend until sugar is dissolved.

3_ Mix flour, corn flour, salt, baking powder and kanamadu(sea almond) in a bowl.

4_ Add half of the liquid mixture into the dry ingredients and mix, add rest of the liquid mix very well until all the flour is nicely blended into the liquid.

5_ Pour batter into the prepared baking tray and bake 45 to 1 hour or until toothpick inserted in center of cake comes out clean. Cool cake completely before frosting.

Method 2

1_ Pre heat oven to 320F/160C, line a 9” inch baking tray with baking paper. Melt butter in oil, set aside to cool completely.

2_ separate egg whites and yolks into two different bowls put the yolks , sugar, milk, vanilla essence, melted oil & butter mixture In to a blender and blend until sugar is dissolved.

3_ Mix flour, corn flour, salt, baking powder and kanamadu(sea almond) in a bowl.

4_ Add half of the liquid mixture into the dry ingredients and mix, add rest of the liquid mixture and mix very well until all the flour is nicely blended into the liquid.

5_ Put the egg whites into a clean dry bowl. Using a hand held mixer. Whip the egg whites until soft peaks.

6_ Using a spatula gently fold the egg white into the cake batter in three batches (do not use any mixer or blender and do not fold vigorously) just gently.

7_ Pour batter into the prepared baking tray and bake 45 to 1 hour or until toothpick inserted into the center of cake comes out clean. Cool cake completely before frosting.

 

How to make Frosting :

  1. Pour the sweetened condensed milk into a heavy bottomed sauce pan or a tall pan( this is because when you cook this frosting it will rise). Stir in the brown sugar, yolks, salt and vanilla. Whisk until completely smooth (Do this before you turn on the heat.)
  2. Turn heat to medium and stir frequently until the mixture almost comes to a boil (but try not to let it boil or the yolks may curdle).
  3. After 5 minutes, turn heat to medium­low and stir nearly constantly, until mixture thickens enough to coat the back of a spoon and not run when you drag a spoon through it (don’t use your finger because this mixture is hot and will burn you). It should take about 6 to 8 minutes more, from the time you turned the heat down to reach the right consistency. It will thicken more later, when it cools.
  4. Remove from heat.
  5. Let cool a few minutes, but frost the completely cooled cake while the frosting is still warm. Sprinkle generous amount of grounded kanamdu(sea almond) on top and sides of cake. You can even layer the cake.
