500 grams Pitted dates, chopped

1 Cup hot water

1 tsp baking soda

250 grams room temperature soften butter

250 grams all purpose flour

230 grams sugar

4 large eggs

1 tsp baking powder

1 tsp vanilla essence

1/3 cup milk

1/4 tsp of salt

1/4 cup sea almond (optional)


1_Into a cup add baking soda and hot water mix to dissolve baking soda. In another bowl add the pitted dates and pour hot water. Cover with plastic food wrap and leave over night for the dates to soak.

2_Preheat oven to 180°C, Line a 9” baking tray with baking paper. Set aside.

2_Add sugar and butter into the mixer bowl and beat until the mixture color changes to light yellow.

3_Add eggs one by one and mix well, now add baking powder, milk, salt and vanilla essence. Again beat the batter for two to three minutes.

4_Shift flour into egg mixture and beat until batter is smooth.

5_Using a spatula or a spoon give a quick mix to the dates and fold into the cake batter. Transfer cake batter into the prepared baking tray. Arrange your choice of nuts on top and bake for 45 to 1 hour, or when a toothpick inserted into the center of cake it should come clean.
